Maamoul (Date & Nut Cookies)
A traditional Palestinian festive dessert, served during Eid and family gatherings. These shortbread cookies feature a wonderful melt-in-your-mouth texture with date or nut fillings.

Ingredients
- 1 kg semolina
- 1.75 cups ghee
- 1 cup all-purpose flour
- 1 tbsp ground mahlab
- 2 packets vanilla, 2 packets baking powder
- 2 tbsp powdered milk
- A pinch of yeast
- Small cup of rose water or blossom water
- Date paste or nut filling
- Powdered sugar for garnish
Steps
- 1Mix (rub) semolina with ghee, flour, and powdered milk; let it rest (preferably overnight).
- 2Add the remaining ingredients and knead together until a smooth dough forms.
- 3Divide and shape the dough, then stuff with dates or nuts.
- 4Use Maamoul molds or a traditional pincher to create patterns.
- 5Bake until they turn a light golden color.
- 6Dust with powdered sugar before serving.
