Maftoul
A distinctive traditional dish perfect for family gatherings and special occasions. It requires effort and teamwork, made from hand-rolled wheat granules and served with cooked chicken or meat.

Ingredients
- 2 kg Maftoul (as needed)
- 1 whole chicken or 1 kg meat
- 1/2 kg boiled chickpeas
- 6 onions
- 4 tomatoes
- Tomato paste, salt, black pepper, cumin, turmeric, ground cardamom
- 4 green chili peppers
- Dried dill seeds
Steps
- 1To prepare chicken/meat: Sauté chopped onion with oil, bay leaves, and other seasonings.
- 2To prepare Maftoul: Steam the maftoul with oil, then add olive oil and ghee for flavor. While on steam, add the spice mix (finely chopped onions, green chili, dried dill, and a pinch of crushed salt).
- 3To prepare the stew: Slice onions thickly and quarter the tomatoes; sauté with oil and spices. Add meat broth and 2 tablespoons of tomato paste, simmer until thickened.
- 4Final assembly: Serve Maftoul on a large plate, pour broth over it, top with some stew as desired, and place chicken or meat on top. Enjoy!
