Musakhan
Musakhan is one of the most loved Palestinian dishes for all ages. It brings together flavorful roasted chicken and traditional flatbread, along with rich onion-sumac topping and other ingredients. It is commonly served at family gatherings and weekend feasts, and every Palestinian mother has her own special touch.

Ingredients
- 1 kg roasted chicken breast
- Salt, black pepper, olive oil, cumin, sumac, cinnamon, 1 teaspoon seven-spice
- Almonds and pine nuts for garnish
- 3 large onions, thinly sliced
- 4 whole-wheat tortilla/flatbread rounds
- Finely chopped parsley
Steps
- 1Season the chicken and bake/roast it in the oven until fully cooked.
- 2Sauté the onions well with plenty of olive oil, sumac, and black pepper until soft and ready.
- 3Lightly toast the bread to give it a slightly crispy texture.
- 4Place the bread on a serving plate, add half of the onion mixture, drizzle a little chicken broth, then arrange the roasted chicken on top.
- 5Toast the almonds, then top the chicken with the remaining onions, almonds, parsley, and a little extra sumac.
- 6Serve with salads and appetizers. Enjoy!
